Zucchini Pancakes
Ingredients
  • 2 cups of grated zucchini
  • 1/4 cup of flour
  • 1/2 teaspoon of baking powder
  • 2 tablespoons of olive oil
  • 1/4 teaspoon of salt

Steps
  1. In a large bowl, combine the grated zucchini, flour, baking powder and salt.
  2. Stir until everything is combined.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Drop spoonfuls of the batter onto the hot skillet and cook for 2-3 minutes on each side until golden brown.
  5. Serve warm with your favorite toppings.
