- 2 zucchini, grated
- 1/2 onion, grated
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 2 eggs, beaten
- In a large bowl, mix together the zucchini, onion, flour, baking powder, salt and garlic powder.
- Add the eggs and stir until everything is combined.
- Heat a large skillet over medium heat and add enough oil to coat the bottom of the pan.
- Drop heaping spoonfuls of batter into the hot oil and flatten with a spatula.
- Cook for about 2 minutes per side or until golden brown and crispy.
- Transfer to a paper towel-lined plate and repeat with remaining batter.
