Zucchini Fritters
Ingredients
  • 2 zucchini, grated
  • 1/2 onion, grated
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 2 eggs, beaten

Steps
  1. In a large bowl, mix together the zucchini, onion, flour, baking powder, salt and garlic powder.
  2. Add the eggs and stir until everything is combined.
  3. Heat a large skillet over medium heat and add enough oil to coat the bottom of the pan.
  4. Drop heaping spoonfuls of batter into the hot oil and flatten with a spatula.
  5. Cook for about 2 minutes per side or until golden brown and crispy.
  6. Transfer to a paper towel-lined plate and repeat with remaining batter.
