Ingredients
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs, lightly beaten
  • 1 cup vegetable oil
  • 2 1/4 cups granulated sugar
  • 3 teaspoons vanilla extract
  • 2 cups mashed ripe bananas (about 4 medium)
  • 2 cups grated zucchini (about 2 medium)

Steps
  1. Preheat oven to 350°F. Grease two 9x5-inch loaf pans and set aside.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon and nutmeg. Set aside.
  3. In a separate bowl, combine the eggs, oil, sugar and vanilla. Beat until light and creamy.
  4. Stir in the mashed bananas and zucchini until combined.
  5. Add the wet ingredients to the dry ingredients and stir just until combined.
  6. Divide batter evenly between prepared pans.
  7. Bake for 55 minutes or until a toothpick inserted into the center of the loaves comes out clean.
  8. Allow bread to cool in pan for 10 minutes before turning out onto a wire rack to cool completely.
