Wild Rice Salad
Ingredients
  • 1 cup wild rice
  • 2 cups vegetable broth
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 3 tablespoons olive oil
  • 1 tablespoon white wine vinegar

Steps
  1. In a large saucepan, bring the wild rice and vegetable broth to a boil. Reduce heat to low and simmer for 40 minutes, stirring occasionally.
  2. Drain the cooked wild rice in a colander and rinse with cold water. Place in a large bowl.
  3. Add the red bell pepper, green bell pepper, onion, celery and olive oil to the bowl with the wild rice.
  4. Stir in the white wine vinegar until everything is evenly mixed.
  5. Serve warm or chilled.
