- 2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter, softened
- 3/4 cup packed brown sugar
- 2 eggs
- 3 ripe bananas, mashed
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a large bowl, mix together the flour, baking soda and salt.
- In a separate bowl, cream together the butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the mashed bananas.
- Slowly mix in the dry ingredients until just blended.
- Pour batter into prepared pan. Bake for 60 minutes or until a toothpick inserted into center of the loaf comes out clean.
- Let bread cool in pan for 10 minutes before removing to cool completely on wire rack.
