- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- 1/4 teaspoon cayenne pepper
- 3 cups chicken broth
- 2 (15 ounce) cans white beans, drained and rinsed
- 3 cups cooked chicken, shredded or diced
- 1 (14.5 ounce) can diced tomatoes, with juice
- Heat the oil in a large pot over medium heat.
- Add the onion and garlic and cook until softened.
- Stir in the chili powder, cumin, oregano and cayenne pepper.
- Add the chicken broth, white beans, chicken and tomatoes.
- Bring to a boil then reduce heat to low and simmer for 15 minutes.
- Serve hot.
