- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and diced
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano leaves
- 1/2 teaspoon salt
- 3 cups cooked chicken breast, shredded or cubed
- 4 cups chicken broth or stock
- 2 (15-ounce) cans white beans, drained and rinsed
- Heat the oil in a large pot over medium heat.
- Add the garlic, onion, bell pepper and jalapeno pepper. Cook for 5 minutes or until vegetables are softened.
- Add the chili powder, cumin, oregano and salt. Stir to combine.
- Add the chicken and cook for 5 minutes more.
- Add the chicken broth and bring to a boil.
- Reduce heat to low and simmer for 15 minutes.
- Stir in the white beans and simmer for an additional 10 minutes. Taste and adjust seasonings if desired.
