Warm Spinach Salad
Ingredients
  • 1 tablespoon olive oil
  • 1/2 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 6 cups fresh spinach leaves, chopped
  • 1/2 cup diced tomatoes
  • 2 tablespoons red wine vinegar

Steps
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add mushrooms and garlic; cook and stir until mushrooms are tender, about 5 minutes.
  3. Add spinach; cook and stir until wilted, about 3 minutes.
  4. Stir in tomatoes and red wine vinegar; cook for 2 minutes more. Serve warm.
