Ingredients
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons grated fresh ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar (or maple syrup)
  • 4 ounces vermicelli noodles, cooked according to package instructions
  • 14 ounces extra-firm tofu, cubed and lightly pan-fried until golden brown

Steps
  1. Heat the oil in a large pot over medium heat. Add the onions and sauté until softened, about 5 minutes. Add the garlic, ginger, coriander, and cinnamon and cook for another minute.
  2. Add the vegetable broth, soy sauce, and brown sugar. Bring to a boil then reduce heat to low and simmer for 10 minutes.
  3. Add the cooked vermicelli noodles and tofu cubes. Simmer for another 5 minutes.
  4. Serve hot with your favorite garnishes.
