Ingredients
  • Rice paper wraps
  • Lettuce leaves
  • Carrots, julienned
  • Cucumber, julienned
  • Fresh mint leaves
  • Fresh cilantro leaves
  • Rice vermicelli noodles, cooked and cooled

Steps
  1. Soak one rice paper wrap in warm water for 1 minute until soft.
  2. Lay the wrap on a work surface. Place a lettuce leaf in the center of the wrap.
  3. Top with carrots, cucumbers, mint, cilantro and noodles.
  4. Fold the top and bottom of the wrap over the filling.
  5. Fold in both sides to form a roll.
  6. Repeat with remaining ingredients.
