- 1 lb. medium shrimp, peeled and deveined
- 1 package of 8-inch round rice paper wrappers
- 1/2 cup cooked vermicelli noodles
- 1/4 cup matchstick carrots
- 1/4 cup matchstick cucumbers
- 3-4 fresh mint leaves, chopped
- 3-4 fresh cilantro leaves, chopped
- Fill a shallow bowl with warm water.
- Soak one rice paper wrapper in the warm water for about 30 seconds.
- Remove the wrapper from the water and place it on a plate.
- Add a small handful of vermicelli noodles, 2-3 shrimp, carrots, cucumbers, mint and cilantro to the center of the wrapper.
- Fold in the sides of the wrapper over the filling and then roll up tightly like a burrito.
- Repeat with remaining wrappers and filling.
- Serve immediately with dipping sauce.
