Vietnamese Shrimp…
Ingredients
  • 1 lb. medium shrimp, peeled and deveined
  • 1 package of 8-inch round rice paper wrappers
  • 1/2 cup cooked vermicelli noodles
  • 1/4 cup matchstick carrots
  • 1/4 cup matchstick cucumbers
  • 3-4 fresh mint leaves, chopped
  • 3-4 fresh cilantro leaves, chopped

Steps
  1. Fill a shallow bowl with warm water.
  2. Soak one rice paper wrapper in the warm water for about 30 seconds.
  3. Remove the wrapper from the water and place it on a plate.
  4. Add a small handful of vermicelli noodles, 2-3 shrimp, carrots, cucumbers, mint and cilantro to the center of the wrapper.
  5. Fold in the sides of the wrapper over the filling and then roll up tightly like a burrito.
  6. Repeat with remaining wrappers and filling.
  7. Serve immediately with dipping sauce.
