- 1/2 pound thin rice noodles
- 3 tablespoons vegetable oil
- 2 cloves garlic, minced
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup fresh lime juice
- 2 tablespoons chopped fresh cilantro leaves
- Bring a large pot of water to a boil. Add the rice noodles and cook until tender, about 5 minutes. Drain and rinse with cold water.
- Heat the oil in a large skillet over medium heat. Add the garlic and cook, stirring constantly, until fragrant, about 1 minute.
- Add the fish sauce, sugar, pepper, and lime juice; stir to combine.
- Add the cooked noodles to the skillet and toss to coat with the sauce. Cook for 1 minute.
- Transfer to a bowl and sprinkle with cilantro leaves. Serve hot or cold.
