Ingredients
  • 1/2 pound thin rice noodles
  • 3 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup fresh lime juice
  • 2 tablespoons chopped fresh cilantro leaves

Steps
  1. Bring a large pot of water to a boil. Add the rice noodles and cook until tender, about 5 minutes. Drain and rinse with cold water.
  2. Heat the oil in a large skillet over medium heat. Add the garlic and cook, stirring constantly, until fragrant, about 1 minute.
  3. Add the fish sauce, sugar, pepper, and lime juice; stir to combine.
  4. Add the cooked noodles to the skillet and toss to coat with the sauce. Cook for 1 minute.
  5. Transfer to a bowl and sprinkle with cilantro leaves. Serve hot or cold.
