Ingredients
  • 2 tablespoons lemongrass paste
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon finely grated ginger
  • 1/4 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes

Steps
  1. In a medium bowl, whisk together the lemongrass paste, fish sauce, brown sugar, ginger, pepper and garlic.
  2. Add the chicken and toss to coat. Cover and refrigerate for at least 30 minutes.
  3. Preheat an outdoor grill or indoor grill pan to medium-high heat.
  4. Thread the chicken onto skewers and grill for 6-8 minutes per side, or until cooked through.
  5. Serve with steamed rice and your favorite vegetables.
