In a large bowl, mix together pork, shrimp, carrots, celery, garlic, fish sauce, sugar, salt and pepper.
Place about 2 tablespoons of the mixture in the center of each egg roll wrapper. Fold the bottom corner up over the filling and tuck it under the filling.
Fold both sides in towards the center and roll up tightly.
Heat oil in a large skillet over medium-high heat. Fry egg rolls until golden brown on all sides.
