Vietnamese Chickeā€¦
Ingredients
  • 1 onion, halved
  • 2-inch piece of ginger, peeled and sliced
  • 2 cloves garlic, peeled and smashed
  • 3 star anise pods
  • 1 cinnamon stick
  • 1 teaspoon coriander seeds
  • 3 whole cloves
  • 2 tablespoons fish sauce
  • 6 cups chicken stock or broth
  • 2 boneless skinless chicken breasts, cut into thin strips
  • 1/4 cup fresh basil leaves, roughly chopped

Steps
  1. Heat a large pot over medium heat. Add the onion, ginger and garlic. Cook for about 5 minutes, stirring occasionally.
  2. Add the star anise, cinnamon stick, coriander seeds and cloves to the pot. Stir to combine.
  3. Add the fish sauce and chicken stock to the pot. Bring to a boil then reduce heat to low and simmer for 15 minutes.
  4. Add the chicken strips to the pot and simmer for 10 minutes until cooked through.
  5. Remove from heat and stir in the basil leaves. Serve hot with jasmine rice or noodles.
  6. Optional: Garnish with extra fresh basil leaves or cilantro
