Ingredients
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 2 teaspoons fresh lime juice
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 (8-inch) French baguette, cut into 4 pieces and split lengthwise
  • 3 tablespoons butter, softened
  • 4 ounces thinly sliced cooked pork belly or ham, warmed through (optional)
  • 4 ounces thinly sliced cooked chicken breast, warmed through (optional)
  • 4 ounces thinly sliced cucumber or jicama slices, for serving

Steps
  1. In a small bowl, whisk together the mayonnaise, Sriracha sauce, honey, garlic, lime juice, salt and pepper until combined.
  2. Spread the butter on the cut sides of the baguette and toast in a preheated 375°F oven for about 8 minutes or until lightly golden brown.
  3. Divide the pork belly or ham (if using) among the 4 pieces of toasted baguette and top with chicken (if using). Top each piece with cucumber or jicama slices.
  4. Spoon the mayonnaise mixture over each sandwich. Serve immediately.
