In a small bowl, whisk together the mayonnaise, Sriracha sauce, honey, garlic, lime juice, salt and pepper until combined.
Spread the butter on the cut sides of the baguette and toast in a preheated 375°F oven for about 8 minutes or until lightly golden brown.
Divide the pork belly or ham (if using) among the 4 pieces of toasted baguette and top with chicken (if using). Top each piece with cucumber or jicama slices.
Spoon the mayonnaise mixture over each sandwich. Serve immediately.
