- 4 large tomatoes
- 1/2 cup cooked quinoa
- 1/4 cup diced yellow onion
- 1/4 cup diced red bell pepper
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- Salt and pepper to taste
- Preheat oven to 350°F.
- Cut the tops off the tomatoes and scoop out the insides.
- In a medium bowl, combine quinoa, onion, bell pepper, parsley and garlic.
- Drizzle with olive oil and season with salt and pepper.
- Stuff each tomato with the quinoa mixture.
- Place tomatoes on a baking sheet and bake for 30 minutes or until softened.
