Veggie-Stuffed To…
Ingredients
  • 4 large tomatoes
  • 1/2 cup cooked quinoa
  • 1/4 cup diced yellow onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Steps
  1. Preheat oven to 350°F.
  2. Cut the tops off the tomatoes and scoop out the insides.
  3. In a medium bowl, combine quinoa, onion, bell pepper, parsley and garlic.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Stuff each tomato with the quinoa mixture.
  6. Place tomatoes on a baking sheet and bake for 30 minutes or until softened.
