Ingredients
  • 2tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced into thin coins
  • 1 red bell pepper, diced
  • 1 cup broccoli florets
  • 1 cup snow peas
  • 3/4 cup vegetable broth
  • 2tbsp soy sauce or tamari (gluten-free)

Steps
  1. Heat oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  2. Add carrots and bell pepper and cook for another 5 minutes.
  3. Add broccoli, snow peas and broth. Cover and let cook for about 5 minutes.
  4. Uncover and stir in soy sauce or tamari. Cook for an additional 3-5 minutes until vegetables are tender.
  5. Serve warm.
