- 2tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced into thin coins
- 1 red bell pepper, diced
- 1 cup broccoli florets
- 1 cup snow peas
- 3/4 cup vegetable broth
- 2tbsp soy sauce or tamari (gluten-free)
- Heat oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- Add carrots and bell pepper and cook for another 5 minutes.
- Add broccoli, snow peas and broth. Cover and let cook for about 5 minutes.
- Uncover and stir in soy sauce or tamari. Cook for an additional 3-5 minutes until vegetables are tender.
- Serve warm.
