Veggie Sloppy Joes
Ingredients
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 2 cups mushrooms, sliced
  • 3 tablespoons tomato paste
  • 1/4 cup ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons Worcestershire sauce (vegan if desired)
  • 1/4 teaspoon black pepper

Steps
  1. Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 4 minutes. Add the garlic, bell pepper and mushrooms and sauté for 5 minutes.
  2. Add the tomato paste, ketchup, mustard, Worcestershire sauce and black pepper. Simmer for 10 minutes.
  3. Serve on buns or over mashed potatoes.
