- 1/2 cup cooked quinoa
- 1/2 cup cooked black beans
- 1/4 cup diced red onion
- 2 tablespoons diced jalapeno pepper (optional)
- 1 tablespoon minced garlic
- 1 teaspoon ground cumin
- 3 tablespoons olive oil
- 3 tablespoons fresh lime juice
- In a medium bowl, combine the quinoa, black beans, red onion, jalapeno pepper (if using), garlic, and cumin.
- In a small bowl, whisk together the olive oil and lime juice.
- Add the olive oil and lime juice mixture to the quinoa mixture and mix until combined.
- Form into small patties.
- Heat a large skillet over medium heat. Add the patties to the skillet and cook for 3-4 minutes on each side or until golden brown.
- Serve on slider buns with your favorite toppings.
