Veggie Sliders
Ingredients
  • 1/2 cup cooked quinoa
  • 1/2 cup cooked black beans
  • 1/4 cup diced red onion
  • 2 tablespoons diced jalapeno pepper (optional)
  • 1 tablespoon minced garlic
  • 1 teaspoon ground cumin
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lime juice

Steps
  1. In a medium bowl, combine the quinoa, black beans, red onion, jalapeno pepper (if using), garlic, and cumin.
  2. In a small bowl, whisk together the olive oil and lime juice.
  3. Add the olive oil and lime juice mixture to the quinoa mixture and mix until combined.
  4. Form into small patties.
  5. Heat a large skillet over medium heat. Add the patties to the skillet and cook for 3-4 minutes on each side or until golden brown.
  6. Serve on slider buns with your favorite toppings.
