- 1 cup uncooked white or brown rice
- 1/2 head cauliflower, chopped into small florets
- 1 red bell pepper, chopped
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- Cook rice according to package instructions.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for about 2 minutes.
- Add the cauliflower, bell pepper, salt and pepper. Cook for an additional 5 minutes or until vegetables are tender.
- Add cooked rice to skillet and stir to combine.
- Serve warm.
