Veggie Rice Bowl
Ingredients
  • 1 cup uncooked white or brown rice
  • 1/2 head cauliflower, chopped into small florets
  • 1 red bell pepper, chopped
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Steps
  1. Cook rice according to package instructions.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for about 2 minutes.
  3. Add the cauliflower, bell pepper, salt and pepper. Cook for an additional 5 minutes or until vegetables are tender.
  4. Add cooked rice to skillet and stir to combine.
  5. Serve warm.
