Veggie Quinoa Sal…
Ingredients
  • 1 cup quinoa
  • 2 cups of water
  • 1/2 cup red onion, diced
  • 1 bell pepper, diced
  • 1/4 cup olive oil
  • 2 cloves garlic, minced

Steps
  1. Bring the quinoa and water to a boil in a saucepan over high heat. Once boiling, reduce heat to medium-low and simmer until the quinoa is tender and the liquid has been absorbed, about 15 minutes.
  2. Remove from heat and fluff with a fork. Transfer to a large bowl and let cool completely.
  3. Add the onion, bell pepper, olive oil, garlic, salt and pepper. Stir until combined.
  4. Serve chilled or at room temperature.
