Veggie Quinoa Bur…
Ingredients
  • 1 cup cooked quinoa
  • 1/2 cup cooked black beans
  • 1/2 cup grated carrot
  • 1/4 cup diced red onion
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 3 tablespoons olive oil

Steps
  1. In a large bowl, combine the quinoa, black beans, carrot, onion, garlic, parsley, paprika and cumin.
  2. Mix until well combined.
  3. Form the mixture into 4 patties.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Cook patties for about 5 minutes on each side or until golden brown and crisp.
