- 1 cup cooked quinoa
- 1/2 cup cooked black beans
- 1/2 cup grated carrot
- 1/4 cup diced red onion
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 3 tablespoons olive oil
- In a large bowl, combine the quinoa, black beans, carrot, onion, garlic, parsley, paprika and cumin.
- Mix until well combined.
- Form the mixture into 4 patties.
- Heat the olive oil in a large skillet over medium heat.
- Cook patties for about 5 minutes on each side or until golden brown and crisp.
