Veggie Quinoa Bow…
Ingredients
  • 1 cup quinoa
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1 cup vegetable broth
  • 3 cups cooked vegetables of your choice (such as bell peppers, corn, and black beans)

Steps
  1. In a medium saucepan, combine the quinoa, cumin, garlic powder, chili powder and salt. Stir in the vegetable broth and bring to a boil.
  2. Reduce the heat to low and simmer for 15 minutes or until the quinoa is tender and all of the liquid is absorbed.
  3. Add the cooked vegetables to the quinoa mix and stir to combine.
  4. Serve warm with avocado salsa.
