- 1 cup quinoa
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1/4 teaspoon salt
- 1 cup vegetable broth
- 3 cups cooked vegetables of your choice (such as bell peppers, corn, and black beans)
- In a medium saucepan, combine the quinoa, cumin, garlic powder, chili powder and salt. Stir in the vegetable broth and bring to a boil.
- Reduce the heat to low and simmer for 15 minutes or until the quinoa is tender and all of the liquid is absorbed.
- Add the cooked vegetables to the quinoa mix and stir to combine.
- Serve warm with avocado salsa.
