Veggie Quinoa Bow…
Ingredients
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 1 cup corn kernels
  • 1 can black beans, drained and rinsed
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Steps
  1. In a medium saucepan, bring the quinoa and vegetable broth to a boil. Reduce heat to low and simmer for 15-20 minutes, or until the quinoa is cooked through.
  2. Meanwhile, heat a large skillet over medium-high heat. Add the bell pepper, onion, corn and black beans. Cook for 5-7 minutes until vegetables are tender.
  3. Add the cooked quinoa to the skillet and season with garlic powder, salt and pepper. Stir to combine.
  4. Serve with avocado cream sauce.
