Veggie Quesadillas
Ingredients
  • 8-inch flour tortillas
  • 1/2 cup cooked black beans
  • 1/2 cup frozen corn, thawed
  • 1/4 cup diced red onion
  • 1/4 cup diced red bell pepper
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil, divided
  • 1 1/2 cups shredded Mexican cheese blend

Steps
  1. Preheat a large skillet over medium heat.
  2. Lay a tortilla in the hot skillet and sprinkle with 1/4 of the cheese. Top with 1/4 of the beans, corn, onion, bell pepper, chili powder, garlic powder, salt and pepper.
  3. Fold the tortilla in half and press down lightly with a spatula. Cook until golden brown on both sides and cheese is melted. Repeat with remaining ingredients.
  4. Serve warm.
