Veggie Quesadilla…
Ingredients
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels, fresh or frozen
  • 1/4 cup salsa
  • 1/4 cup red onion, diced
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cumin powder
  • 3 whole wheat tortillas
  • Olive oil cooking spray
  • 3/4 cup shredded Mexican cheese blend

Steps
  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, mix together black beans, corn, salsa, red onion, garlic powder and cumin.
  3. Spray a baking sheet with cooking spray.
  4. Place one tortilla on the baking sheet.
  5. Spread 1/3 of the bean mixture on the tortilla.
  6. Sprinkle 1/4 cup of cheese over the bean mixture.
  7. Place second tortilla over the cheese layer.
  8. Repeat with remaining bean mixture and cheese.
  9. Top with last tortilla.
  10. Spray top lightly with olive oil cooking spray.
  11. Bake for 12-15 minutes until golden brown and crispy. Cut into slices and serve.
