- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels, fresh or frozen
- 1/4 cup salsa
- 1/4 cup red onion, diced
- 1/4 teaspoon garlic powder
- 1/8 teaspoon cumin powder
- 3 whole wheat tortillas
- Olive oil cooking spray
- 3/4 cup shredded Mexican cheese blend
- Preheat oven to 375°F (190°C).
- In a medium bowl, mix together black beans, corn, salsa, red onion, garlic powder and cumin.
- Spray a baking sheet with cooking spray.
- Place one tortilla on the baking sheet.
- Spread 1/3 of the bean mixture on the tortilla.
- Sprinkle 1/4 cup of cheese over the bean mixture.
- Place second tortilla over the cheese layer.
- Repeat with remaining bean mixture and cheese.
- Top with last tortilla.
- Spray top lightly with olive oil cooking spray.
- Bake for 12-15 minutes until golden brown and crispy. Cut into slices and serve.
