- 2 bell peppers (sliced)
- 1 cucumber (sliced)
- 1 cup of cherry tomatoes
- 1/2 red onion (sliced)
- 1/4 cup of fresh parsley (chopped)
- 3 tablespoons of olive oil
- Preheat the oven to 375°F.
- Spread the bell peppers, cucumber, tomatoes and red onion on a baking sheet.
- Drizzle with olive oil and season with salt and pepper.
- Roast in the oven for 20 minutes or until vegetables are tender.
- Sprinkle with fresh parsley before serving.
