Veggie Platter
Ingredients
  • 2 bell peppers (sliced)
  • 1 cucumber (sliced)
  • 1 cup of cherry tomatoes
  • 1/2 red onion (sliced)
  • 1/4 cup of fresh parsley (chopped)
  • 3 tablespoons of olive oil

Steps
  1. Preheat the oven to 375°F.
  2. Spread the bell peppers, cucumber, tomatoes and red onion on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Roast in the oven for 20 minutes or until vegetables are tender.
  5. Sprinkle with fresh parsley before serving.
