Veggie Omelette
Ingredients
  • 2 eggs
  • 1/4 cup diced bell pepper
  • 1/4 cup diced onion
  • 1/4 cup diced mushrooms
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Steps
  1. Whisk eggs in a medium bowl until combined.
  2. Heat a non-stick skillet over medium heat. Add bell pepper, onion, mushrooms and parsley to the skillet. Cook for 2-3 minutes or until vegetables are soft.
  3. Pour egg mixture into the skillet and season with salt and pepper.
  4. Cook for 3-4 minutes or until omelette is cooked through.
  5. Carefully fold omelette in half and slide onto a plate. Serve immediately.
