Veggie Noodle Sou…
Ingredients
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 3 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes with juice
  • 1 can (15 ounces) black beans, drained and rinsed
  • 4 ounces uncooked egg noodles or other small pasta of choice

Steps
  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic and cook for about 5 minutes until fragrant.
  2. Add the carrots and celery and sauté for an additional 5 minutes.
  3. Stir in the thyme, oregano, vegetable broth, tomatoes with juice and black beans. Bring to a boil.
  4. Reduce the heat to low and simmer for about 15 minutes.
  5. Add the noodles to the soup and cook for an additional 10 minutes until noodles are cooked through.
  6. Serve hot with desired toppings.
