Veggie Fajitas
Ingredients
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 zucchini, sliced
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 2 tablespoons chili powder
  • 2 tablespoons cumin powder
  • Salt to taste

Steps
  1. In a large bowl, combine the bell peppers, onion and zucchini.
  2. In a small bowl, mix together the olive oil, garlic powder, chili powder and cumin.
  3. Pour the olive oil mixture over the vegetables and toss to coat.
  4. Heat a large skillet over medium-high heat. Add the vegetables and cook for 8-10 minutes or until they are tender.
  5. Season with salt to taste.
  6. Serve warm with your favorite toppings.
