Ingredients
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 4 cups vegetable broth
  • 1 cup wild rice blend, rinsed and drained
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon black pepper

Steps
  1. Heat the olive oil in a large pot over medium-high heat. Add the onions and garlic and cook for 2 minutes. Add the carrots and celery and cook for another 5 minutes.
  2. Add the thyme, vegetable broth, wild rice blend, salt (if using) and pepper to the pot. Bring to a boil, then reduce heat to low. Simmer for 45 minutes or until the rice is tender.
  3. Serve hot with your favorite toppings. Enjoy!
