- 1 cup wild rice blend
- 1/4 cup olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 3/4 cup white wine
- 2 tablespoons butter
- 1/4 cup Parmesan cheese, grated
- Heat olive oil in a large saucepan over medium heat. Add onion and garlic and cook for 3 to 5 minutes.
- Stir in wild rice blend and cook for 1 minute.
- Add vegetable broth, white wine, and butter. Bring to a boil then reduce heat to low. Simmer, covered, for 45 minutes or until rice is tender.
- Stir in Parmesan cheese and season with salt and pepper to taste.
