Ingredients
  • 1 cup wild rice blend
  • 1/4 cup olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 3/4 cup white wine
  • 2 tablespoons butter
  • 1/4 cup Parmesan cheese, grated

Steps
  1. Heat olive oil in a large saucepan over medium heat. Add onion and garlic and cook for 3 to 5 minutes.
  2. Stir in wild rice blend and cook for 1 minute.
  3. Add vegetable broth, white wine, and butter. Bring to a boil then reduce heat to low. Simmer, covered, for 45 minutes or until rice is tender.
  4. Stir in Parmesan cheese and season with salt and pepper to taste.
