Ingredients
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 celery stalks, diced
  • 1 large carrot, peeled and diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 3 cups cooked wild rice blend
  • 3 cups vegetable broth or stock
  • 1 (14.5-ounce) can diced tomatoes with juices
  • 1 (15-ounce) can chickpeas, drained and rinsed

Steps
  1. Preheat oven to 375°F.
  2. Heat the oil in a large skillet over medium heat. Add the onion, celery, and carrot and cook until softened, about 5 minutes.
  3. Add the garlic, thyme, and oregano and cook until fragrant, about 1 minute.
  4. Stir in the cooked wild rice blend and vegetable broth or stock.
  5. Bring to a boil then reduce heat to low. Simmer for 10 minutes.
  6. Stir in the diced tomatoes with juices and chickpeas.
  7. Transfer to an 8x8-inch baking dish. Bake for 25 minutes.
  8. Serve hot.
