- 1/2 cup cooked black beans
- 1/4 cup cooked corn
- 1/4 cup diced red onion
- 1/4 cup diced tomatoes
- 2 tablespoons chopped cilantro
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 4 small flour tortillas
- In a medium bowl, combine black beans, corn, red onion, tomatoes, cilantro and olive oil.
- In a small bowl, mix together chili powder and salt.
- Heat the tortillas in a skillet over medium-high heat for about 2 minutes per side.
- Divide the bean mixture between the four tortillas. Sprinkle with chili powder and salt.
- Serve warm.
