Vegetarian Tacos
Ingredients
  • 1/2 cup cooked black beans
  • 1/4 cup cooked corn
  • 1/4 cup diced red onion
  • 1/4 cup diced tomatoes
  • 2 tablespoons chopped cilantro
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 4 small flour tortillas

Steps
  1. In a medium bowl, combine black beans, corn, red onion, tomatoes, cilantro and olive oil.
  2. In a small bowl, mix together chili powder and salt.
  3. Heat the tortillas in a skillet over medium-high heat for about 2 minutes per side.
  4. Divide the bean mixture between the four tortillas. Sprinkle with chili powder and salt.
  5. Serve warm.
