- 2-3 cups lettuce, chopped
- 1/2 cup black beans, cooked and drained
- 1/4 cup corn kernels, cooked and drained
- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- 3 tablespoons cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- In a large bowl, combine lettuce, black beans, corn kernels, tomatoes, onion and cilantro.
- In a small bowl, whisk together olive oil, lime juice and chili powder.
- Drizzle dressing over salad and toss to combine.
