Ingredients
  • 2-3 cups lettuce, chopped
  • 1/2 cup black beans, cooked and drained
  • 1/4 cup corn kernels, cooked and drained
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • 3 tablespoons cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder

Steps
  1. In a large bowl, combine lettuce, black beans, corn kernels, tomatoes, onion and cilantro.
  2. In a small bowl, whisk together olive oil, lime juice and chili powder.
  3. Drizzle dressing over salad and toss to combine.
