Vegetarian Stuffe…
Ingredients
  • 1 lb jumbo shells
  • 1 28-oz can crushed tomatoes
  • 1/2 cup vegetable broth
  • 3 cloves garlic, minced
  • 1 tsp oregano
  • 1/2 tsp basil
  • 15-oz container ricotta cheese
  • 2 cups shredded mozzarella cheese

Steps
  1. Preheat oven to 375 degrees F.
  2. Cook shells according to package instructions.
  3. In a large saucepan, combine crushed tomatoes, vegetable broth, garlic, oregano and basil.
  4. Bring to a boil and simmer for 10 minutes.
  5. In a medium bowl, mix together ricotta cheese and 1 cup of the mozzarella cheese.
  6. Stuff each shell with the ricotta mixture and place in a 9x13 inch baking dish.
  7. Pour the tomato sauce over the shells and top with remaining mozzarella cheese.
  8. Bake for 25 minutes or until cheese is melted and bubbly.
