Vegetarian Stroga…
Ingredients
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced into thin strips
  • 8 ounces mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1/4 cup white wine or vegetable broth
  • 2 cups vegetable broth
  • 3 tablespoons tomato paste
  • 3/4 teaspoon dried thyme leaves
  • 1/4 teaspoon ground black pepper
  • 2 cups cooked egg noodles or other pasta of choice

Steps
  1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the bell pepper and mushrooms and cook for an additional 5 minutes.
  2. Sprinkle the flour over the vegetables and stir to combine. Pour in the white wine or broth and cook for 1 minute.
  3. Add the vegetable broth, tomato paste, thyme, and black pepper. Bring to a simmer and cook until thickened, about 10 minutes.
  4. Stir in the cooked noodles or pasta of choice. Simmer for 2-3 minutes until heated through.
  5. Serve hot.
