- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 large sweet potato, cubed
- 1 red bell pepper, diced
- 2 carrots, diced
- 2 cups vegetable broth
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/4 teaspoon chili powder
- Heat oil in a large pot over medium-high heat. Add onion and garlic and sauté until softened.
- Add sweet potato, bell pepper, and carrots and cook for 5 minutes.
- Pour in the vegetable broth and bring to a boil. Add the paprika, cumin, and chili powder.
- Reduce heat to low and simmer for 25 minutes until vegetables are tender.
- Serve warm.
