Vegetarian Ramen …
Ingredients
  • 2 tablespoons sesame oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili garlic sauce (optional)
  • 4 ounces shiitake mushrooms, sliced thin
  • 4 ounces firm tofu, cut into cubes
  • 3 green onions, thinly sliced

Steps
  1. Heat sesame oil in a large pot over medium-high heat. Add onion and cook until softened, about 3 minutes. Add garlic and ginger and cook for another minute. Add vegetable broth, soy sauce, rice vinegar and chili garlic sauce (if using). Bring to a boil.
  2. Add mushrooms and tofu to the pot. Reduce heat to medium-low and simmer for 10 minutes.
  3. Divide soup between four bowls. Top with green onions and serve.
