Vegetarian Quinoa…
Ingredients
  • 1 cup quinoa
  • 1 teaspoon olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 15 ounces black beans, drained and rinsed
  • 15 ounces enchilada sauce
  • 8-10 soft tortillas

Steps
  1. Preheat oven to 350 degrees F. Grease a 9x13 inch baking dish.
  2. Cook the quinoa according to package instructions.
  3. In a large skillet over medium heat, heat the olive oil. Add the onion and garlic and cook until softened, about 3 minutes. Add the bell pepper and cook for an additional 3 minutes.
  4. Stir in the chili powder, cumin, salt and pepper. Add the black beans and cooked quinoa to the skillet. Stir in 1/2 cup of enchilada sauce.
  5. Lay out a tortilla on a flat surface. Spread about 1/4 cup of quinoa mixture on one half of it. Fold it over into a half-moon shape.
  6. Place the filled tortilla in the prepared baking dish. Repeat with remaining ingredients.
  7. Pour remaining enchilada sauce over top of filled tortillas.
  8. Bake for 20 minutes or until heated through.
  9. Serve warm.
