Vegetarian Quinoa…
Ingredients
  • 1 cup uncooked quinoa
  • 1 15-ounce can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 cup salsa of your choice
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste

Steps
  1. Cook quinoa according to package instructions.
  2. In a medium bowl, combine black beans, bell pepper, salsa, chili powder and salt and pepper.
  3. Mix together with cooked quinoa.
  4. Serve warm or cold.
  5. Optional: Top with avocado or cheese.
