- 1 cup uncooked quinoa
- 1 15-ounce can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1/2 cup salsa of your choice
- 1/4 teaspoon chili powder
- Salt and pepper to taste
- Cook quinoa according to package instructions.
- In a medium bowl, combine black beans, bell pepper, salsa, chili powder and salt and pepper.
- Mix together with cooked quinoa.
- Serve warm or cold.
- Optional: Top with avocado or cheese.
